pasta revamped!


Well I didn’t really think that I was going to do an entry today, but my dinner was too good to not at least get that down.  However b/4 that I’m going to do the norm and complain about my day.  

I thought it was going to be terrible b/c once again I had a hard nights sleep – to hot, uncomfortable, not enough room; you know having to share a bed w a heater X2 and all.  My bfast wasn’t all that great, but I ate it quickly.  Then Sasha decided she needed to cuddle so I let her.  

I’m not sure but I believe my CCT3 was upset w me all day today.  I asked her a couple of times how she was dong, how her weekend went, if there was anything wrong, and she never divulged.  However she left @ 4:10 and came in w the DR so I still think there was something buggin her.  

The day itself was normal; nothing great, nothing awful.  

When I got off hubs was still at work so I got to play w Sasha for an hour or so b/4 my routines.  My dinner was a minute or so from being down when he got home so I turned it on low and did his instead of eating mine.  

Now to the goods;
Bfast – cantaloupe w cottage cheese
IMO – melon not as sweet w the cheese and not a favorite
        brand
Snacks – carrots w sugar snap peas
IMO – LOVE these peas!!!!  So sweet
Lunch – the other half of my beef/balls w barley & ‘vamped up’
IMO – way better than last time (don’t remember what I did
        then), but this time I added peas and broccoli w lots of spice
        and Italian seasoning (not the spinach and herb like last time).  
Snacks – Clementine and an apple
Dinner – LO past ‘revamped’ & 8oz vino
Nasty pasta from Saturday that was penne tossed w EVOO
        and spices and topped w mushrooms, onions, and sun dried
        tomatoes.  
                   I sautéed some baby bellas and LO grilled onions
   Then threw in the penne (which I finished cooking 
                   they were WAY underdone)
   Tossed w 1/8 c tomato sauce, crushed red pepper, basil,
                   garlic, s&p, and a sugar sprinkle
                  WOWZA ----  I want to remember this dish so I can
                   recreate it from scratch!!!  
Dessert – 2 oreos, milk, and 1 pb cookie

Allrighty, now that I have that pasta dish down for memory my high today was playing w Sasha at home.

Do you ever revamp a LO dish to make it WAY better????

Back to the grindstone


Today was one of the easiest Monday’s in a loooooooonnnnnggggg time!  

I had a pretty decent nights sleep, just a little bit of tossing and turning.  I didn’t make lunch last night when I got home (BTW if you’re wondering I was w mom all weekend!  We didn’t do too much; just play on the net researching vacations and scarves, and food, and random junk AND went out to eat on Sunday and then shopped for mom.  I didn’t get home till around eight and still had to make dinner and played w pup.) SOOOO back to this morning I enjoyed my bfast and then instead of relaxing I got busy making my lunch for the day.  

The main reason today was easy was b/c how fast it moved: the first half our or so we spent it in the hallway b/c of the tornado warning.  Circle time was easy and the kids listened well.  We got paperwork two times, that’s right TWO! times today.  The sub came in and relieved us for two hours in the morning (my CCT3 took an hour and I took bout 45 mins; I went to the public library and got books for this lesson).  After nap CCT1 came in ten mins late and we got more time.  My CCT3 used an hour and twenty minutes and I got out at three since we dropped down in numbers.  So CCT3 got 2 hrs and 20 mins!  AND I got 1 hr and 45 mins..  This would be way more exciting if I could actually do some paperwork, but it’s put on hold b/c of the girls whose place I took (she lost all the assmts so I got screwed; long story!).  

None of our challenging children were too difficult and we were low in nos in aftercare.  

Hubby had to work late so when I got home I had lots and lots of stuff to do.  Sasha dropped a deuce and stepped in it which got all over the place.  Instead of cleaning it up right away we played outside for 30 or so minutes.  While we were outside I noticed I new ‘spot’ so we came in and she got spot washed.  THEN I cleaned, and I mean CLEANED her kennel area!  Cleaned poop w one towel, scrubbed floor w oxiclean, and ten sprayed it w the oxy pet deodorizer stuff.  

By the time I finished it was around 6:30 or so.  I made lunch for tomorrow and dinner.  Now I’m enjoyed a cup of spiked java and watching House.  Since I’ve told you about my day, how bout my eats?!: 
Bfast – raspberry banana oatmeal
Snacks – ½ donut
Lunch – yummy tomato soup w veggies (I really wish I could figure out how to recreate this kind of tomato soup)
Snacks – slice of cake & handful of goldfish and a green apple
Dinner – tortilla pizza, a few cheese balls, and a teeny slice of hubs pizza as well as a slice of crust
My pizza was delish! 
Tomato basil tortilla
2 T tomato sauce (apprx)
Sprinkles of cr. red pepper, basil, & garlic
Slice red onions and 2 small bell peppers
1 oz Italian cheese & a sprinkle of feta
TO MAKE:  toast the tortilla first, flip, top, and bake till cheese is melty
IMO – LOVED LOVED LOVED!!!!!  Not sure what made it so tasty, but was a nice blend of
               sweet, herbs, and a kick.

I’m pretty sure that’s all there is to say.  My high today is our little guy who’s got supposed Autism mastered a goal (even though we don’t have to record and report); coloring pictures!  He usually likes to write letters and we have to verbally prompt him to color, but not today!  He took out a picture of two kids in rain gear w umbrellas and started coloring.  He colored the umbrellas first and then used a brown for their boots!  Of course he didn’t stay in the lines, but he did a solid coloring!!!!  

So glad to have a nice Monday for a change.    Do you have an awesome tomato soup that’s sweet and herby to share w me????

wednesday catch-up and a fun thursday

So this is sort of day two of my attempting to get back on track.  I didn’t write to you yesterday thinking I’d try to follow WW, but I would like to tell you about my dinner double date.  We ate we Lindsay and Colin at Ru Sans.  I actually got there first.  IDK if you remember or not but the last time we met them it was raining and I hadn’t driven in that area for a while and had no clue where parking was.  This time though I parked behind the Station Inn, which was free and luckily I didn’t get towed.  There was a concer going on so that may have had something to do with it.  Hopefully there will be a concert or shin-dig going on next time we dine there. I enjoyed myself as always and found out some extremely interesting house talk that I won’t describe here if there is some strange reason a stranger happens upon this and reads.  I will say that it def. opened my eyes to new living.  On to dinner shall I?... I thought hubby would order the sashimi plate again, but he didn’t.  Since I had the menu printed off from last time I knew some of the things I wanted to try and made two separate choices: one for just me and one in case hubs did order sashimi and would share.  As just previously mentioned I got the pleasure of ordering my own dinner: Albacore Tuna Nigiri, Tuna Maki (tuna wrapped in rice w seaweed on the outside), and Tiger Shrimp Appetizer thing.  IMO the albacore didn’t seem that much better than the ordinary tuna.  The shrimp app was way different than I read the description.  I can’t really remember the description, but on the plate there was this MASSIVE serving of semi bland guacamole.  Probably about two avocado’s worth!  Off to the side of the guac was some deliciously marinated and cooked shrimp.  And surrounding the other edge of the guac were these weird chips (that I know were described as crisps of some sort) but kind of had the consistency of Muncho’s and felt really strange on the tongue.  I’m pretty sure that the chef/creator included one shrimp per chip and assumed the guest would use a quarter of a cup of guac per chip/shrimp combo.  Def. not worth the eight + bucks they charged, but oh wellz, at least I tried it and found out.  Not everything can be a win right?

Now on to today since that extremely long paragraph just recapped dinner!

Bfast was a banana and some blackberry carbmaster.  Nothing fancy or plated/dished. 

The day was pretty amazing.  We had three out of six kids, all there are on my case load.  My CT was nice and stayed in the room with me the entire time.  All three had some amazing days: Burrows made some amazing eye contact to request help several times, vocalized for his SLP during therapy, used his fork with only one reminder, took a nap, and several other positives; the biggest one being that he didn’t have any meltdowns!  Blondie actually actively engaged in several activities.  She made choices by pointing, requested a song, babbled, and walked on her own without any outside ‘pushing’: she got out of her chair and walked to my CT.  Oh yeah and she spoon fed herself ¾ of a cup of yogurt!  Sassitude participated a lot today too.  She also vocalized for several things and showed us that she knew body parts!  When mom picked up Sassitude she mentioned that the SSI lady though she had Autism.  My CT and I just gawked.  The child was/is a Shaken Baby, which of course is going to have/display some sort of ‘issues’.  The SSI lady thought that the child stemmed and played to focused on one activity.  For heavens sake she’s got brain damage!  Maybe her stemming is b/c she has vision trouble?  Or maybe she’s two and likes dolls!  Anyways I could go on and on for many pages I’m sure about how stupid the SSI lady is, but I think you get the point – brain damage not Autism!  And while I’m on my soap box this just goes to show ya how over diagnosed Autism is!!!      

Since today is Thursday I did half my afternoon time in the baby room and other half w the big kids.  The AT in the baby room is back (she was out due to her son getting tubes – he did well and hasn’t slept comfortably yet, but that’s it really).  I went in a couple of minutes late, my CT doesn’t think getting in to our rooms on time is very important.  I as trying to leave and she kept trying to talk to me.  However when I got in there the AT was already doing DN’s b/c the floater was in there, so I didn’t feel too terribly guilty.  When it was time for me to leave though she wasn’t done and I went to the next room late.  I really need to say something to the DR about this again.  I think I’ve asked before what to do in that case, but don’t really remember what she said to do. 

Both of the teachers were out during my time w the big kids.  Not a big deal really.  I actually enjoyed it too.  I got to work on doing a jigsaw puzzle with the DR’s daughter, which was fun trying to get her to look at the box and try to create a picture.   I’m sure Aaron would insist that was a reason to have kids; so he could do it too.  The bad part about both teachers being out is that they’ve changed their aftercare routine a bit and I’m not familiar with it so I didn’t keep the kids on schedule.  My bad.  The AT said it wasn’t a big deal that they would just all play together. 

Earlier on in the day I asked the DR if I could work on Sassitude’s metro sheet if numbers were low this afternoon and she said it was fine.  However when four o’clock rolled around and I tried to get the Giraffes room covered she, the DR, told me to go ahead and let the chick out doing paperwork complete her time and I could just take some from her tomorrow.  Wonder if that will follow through?

I was able to get out of the classroom at a quarter till and complete my TEIDs I didn’t finish due to my CT wanting to talk. 

When I got off I was torn btwn going/coming home to make dinner or go to hubby’s game.  I ended up coming home and told myself that since his game should be at seven next week I can do that better.  I’ll at least have time to eat something before that hour. 

At the casa I prepped bfast – strawberry and mango for a parfait, lunch – a salad to top w Mexican chicken and fruits and veggies, and then dinner.  I used an idea from here and tweaked it a bit. 

1 Serving:
ingredients
1 cabbage leaf
3 inch chunk of leek
1 serving sun dried tomatoes
1 serving canned chicken or chicken of choice
22 g dried pasta of choice
Parmesean cheese
Spices/seasons of choice: mine were Italian seasoning, chili powder, and garlic

To make
Heat skillet   Sautee cabbage, leeks, and sdt’s.  Stir in seasonings and a bit more oil for taste.   Toss in chicken.  Stir.  Toss over pasta, sprinkle w cheese, add S & P if you’d like.  EAT. 

I liked it.  Next time I’ll probably use a bit more oil maybe?  It wasn’t quite as moist as I’d like, but good flavor. 

While eating I went through the circulars.  It was a right around seven when I finished and Aaron wasn’t home.  So I washed dinner dishes and sat down to a cup of lemon cream pie yogurt from Aldi.  It was okay.  Their banana cream pie was much better. 

Aaron got home around 8:30 or so, which I though was unusually late.  His game was at six, ends at seven, and should have been home by eight.  He said his game didn’t end till late b/c it started late.  He had a strange auror about him and his eyes were really red.  He said nothing was wrong.  After a bit longer he did confess to pretty much drinking all afternoon.  He had a couple at lunch w his coworkers.  A couple more at the lot while working on his own car off the clock.  And a couple more at the game, since it’s a drinking and playing league.  I’m surprised he’s up and walking and driving.  However I know it’s been over a course of several hours, but still makes me a bit nervous. 

Well now that he’s home and we are going to watch Tudors.  Most excited about my kids doing so well today!

can it be? healthy 'fried' rice!

Well I didn’t sleep that well last night either.  I couldn’t breathe all that great and woke up multiple times w that wonderful snotty drool we all get.  I wanted to call out and stay home, but knew that wouldn’t necessarily make me feel better. 

I enjoyed another bowl of banana bread oatmeal.  While the oatmeal was ‘cooking’, I prepped my lunch since I didn’t do it yesterday.  I made fruits and veggies we the broccoli garden V8 soup.  This morning I had the genius idea to add raisins or craisins, but I didn’t (since I made poor eating choices this weekend).  This was a good bowl.  While consuming the yumminess I read some more of my book and then paid the mortgage bill.

I actually got to work about ten minutes earlier than usual.  This gave me time to record all my debits/credits so I can balance my books.  I also checked emails and blogs.  The guy I ran into from college at Play requested to be ‘friends’ on FB.  Thought it was funny.  I accepted, but didn’t read anything on his page.  Some of the gals posted pictures of me w tags from Friday night.  Next time I wear that dress I’ll wear a solid black bra.  You can kind of see the prints on it in the picture.  I couldn’t see em in the mirror! 

The day went smoothly.  We had six kids out of eight.  Four of them were mine.  Which basically means I had more DN’s to write than my CT.  We also started our kids art projects to make hand print hearts.  It went smoothly too.  One of the most aggravating parts of the day was the OT kept asking if we had done things we our kids: work on eating w a spoon, try drinking from a straw, practice taking bites of bread, things like that.  It irked me b/c I don’t think those things are important w the kids in particular.  The kid she was referring to about using the spoon needs to be comfortable in class first.  The one w about the straw needs to eat food for us first.  And the guy w the bread I just left out there on his own b/c he is able to self feed while I work on the other three children on my case load.  It’s much easier for her b/c she only has to work with one kid at a time, as to where I’m spreading my focus all around, as well as usually eating a snack myself. 

Oh yeah I started my summaries this morning.  Literally just started them.  All I got done was entering the data.  This afternoon the AT in the baby room son went home sick w a fever, which means she’s going to be out tomorrow.  I only mention this b/c I’m sure the DR is going to ask me to stay late tomorrow and close.  I’m not going to be able to.  I did today.  I stayed and closed the toddler room.  Tomorrow however I need to finish reading my book and then attend the meeting!  I’m super excited (esp. if I finish the book), it’ll be the first time I’ve attended this meetup group gathering. 

Guess I should mention that I didn’t really like the broccoli garden soup.  It needs a little something; cheese? bacon? spice?  I’m not sure but hopefully I figure it out b/c I’ll probably finish it on Wednesday.  For dinner I made an amazing bowl of chicken fried rice.  And yes I’m going to include the recipe only b/c I want to re-make it at a later date.
            red onion, cabbage, bell pepper (or any other mix of veggies)
1 serving (118 g) of left over rice (I used sushi rice flavored w pickled ginger (reserve) from Ru Sans)
            1 serving (56 g) canned chicken
            Sirachi and soy sauce to taste
            Spritzing oil
-          sautee veggies in hot skillet w spray oil
-          add rice to skillet, use more spray oil if needed
-          in separate bowl mix pickled ginger, chicken, sirachi, and soy sauce
-          add chicken (or other meat) mixture to skillet to warm
-          then re add veggie mix to blend and reheat
-          if desired serve w extra soy sauce and green onion
I’m counting this dish as eight points – 4 for the rice, 1 for chicken, and 3 for oil/sauces.  I’m also hoping I can find pickled ginger at the store so I can make this again and not have to wait for Ru San’s leftovers.

My throat is really bothering me so I had an ice cream/frozen treat – WW endorsed dark chocolate covered raspberry in hopes the coolness would soothe my throat.  It didn’t so I broke down and am enjoying a cup of red tea w honey.  I used a dark honey, a whole serving (which is another point) for a change, and it as actually sweet enough. 

Well that’s the end of my day, up till this point.  We are going to finish watching Medium and then go to bed.

The best part today – a successful impromptu recipe.
