TGIF and kudos to blendtec


HAPPPY FRIDAY FOLKS!!!!  

Today was water play at school and would you believe that I ran off an left my swim wear at the house?!?!?  I had Aaron dig it out and everything.  I had it packed and in the bag ready to go next to my purse and realized as I was getting on the interstate that it was still on the bed.  Most of the teachers came in wearing their gear, but the bottoms are just so uncomfortable to wear, that whole stick to ya not cotton material like panties.  I had planned on changing when we got our 10:00 potty break, but told the kids not to spray me.  Most of them listened.  I had to remind our oldest kid and stay out of the way of one of the younger ones (he was just testing the distance it squirted).  

My CCT3 was stressed that it was going to be a challenge (she hates water days b/c of this fact), but we worked out a system to make it easier: send out a few kids at a time to start and slowly trickle them out and bring them back to class in the same order (that way only two or three are redressing at a time rather than 14/15 at once.  

The rest of the day was pretty busy too.  The ED son and the little girl who dances (can't remember the handle I've given her) would not listen when it was time to go to the gym so I sent them to the two's class.  I'm pretty sure it made the ED really upset; but I'd tried everything else I possibly could and he just would not listen.  The rest of the class had already missed some of their play time b/c of them and I didn't think it was fair for them to miss anymore.  I'm wondering if I get a 'lecture' about it next week.  

I haven't been recording my foods this week, no real reason other than it's just been late at night and I've been ready to turn in, but today I'll tell you (at least some of it).  I made a sundried tomato and basil hummus using the protec and it was AWESOME!!!!!  It wasn't the consistency I wanted; probably b/c I only wanted a single serving rather than using the entire can.

Ingredients
1/2 can beans, drained, cleaned, and deskinned
1/2 t garlic powder
1 T tahini
water (just to make the machine run)
2 T lemon juice
sprinkle to taste of salt, chili powder, a random spice blend in 
        the cabinet,
7 g s.d tomatoes (not the oil ones) and 7 leaves of fresh basil
        + 1/2 t d. basil
To make
I threw it all into the blendtec and processed until I was
        satisfied.  
*changes next time: heat the beans and water like Maven did and maybe use the oil packed s. d. tomatoes*

I ate it w lots of fresh veggies and it was sooooo good!!!  Aaron actually liked it to and it got more herby and smoky over night.  

Aaron had the day off today so he was uber sweet and made us dinner: spinach mushroom feta stuffed chicken breast (his had bacon inside and out), mashed cauliflower for me, and steamed broccoli.  Thanks hun!  I only half the chicken breast and almost all the cauliflower (he made almost two cups).  

Allrighty off to bed.  My high today was the awesome dinner w hubs.

Do you ever make hummus and tweak?  Any tips on the silly skin on those beans?

lots and lots of info!

Wow this morning was an icky one!  I was eating my bfast and Sasha girl lost hers right in front of me! 

At work I finally realized how to help Dear Fussy, not sure I mentioned this but she’s been in panties all week too!  Anyways she’s gotten to where she says really mean things to me and asks for my CCT3….soooooo duh why have I been ‘fighting’ it so to speak this entire time?!?!  Now I kind of just let my CCT3 do everything w the little girl.  Why on earth would I willingly cause a breakdown when just letting my CCT3 helps and the task is done in less than two minutes? 

We got paperwork again today!  My old CCT1 came in at 2:05!  Fortunately enough for us I mentioned to my CCT3 to have her stuff ready so she could head right out.  I went to the ladies room and then she went.  My partner in crime took the entire time, an hour and forty five minutes at least.  The DR had scheduled the new fill in chick to come in for an hour (from 3:30 – 4:30) and that was my time.  She didn’t really come in till 3:35 and I had to help settle everybody in so I really only got forty five minutes.  I recorded it on our calendar just in case somebody wants to ask when I do my business.  I need to have the balls to say to my CCT3 that we should split it better. 

On my way home I had a bad feeling about my car b/c I knew my oil was low, at least had a pretty good idea it was.  When I pulled into the driveway I checked it and my feeling was correct.  I headed to Wal Mart.  Horrible idea at the time.  There was an accident of some sort about two blocks from the store and it took two of three lanes out.  Once I finally got there I was super quick getting the stuff I needed (I decided to make a dish for baby shower tomorrow – after pondering it over forever).  When I got in the car I realized I forgot the entire reason I was there; the OIL!!!  So I had to pull around back and get some; however I also discovered that my battery actually has a 3 yr warranty and I got it in July of 12’. 

Back home I got busy on my ‘salad’.  I used this recipe w a few tweaks of my own
            I didn’t use the corn subbed bell peppers.  Used roma and a vine tomatoes instead of the babies.  
            And since I love me some red onion did that instead of yellow.  I also used black, kidney, and
            chickpeas. 
            IMO – the first bite was kind of weird, kind of a little extra spice or something.  It’ll calm I’m sure
            once all the flavors ‘merry’. 

Okay, my belly is full and I’m ready to relax.  My eats:
Bfast – peach blueberry 7 grain
Snacks – crackers w cheese and pretzels
Lunch – soup spiked w veggies and extra flavors (I put bay leaves in and LOVED it, as well as crushed red pepper) 
Snacks – cheese cubes and grapes
Dinner – an instant Asian ramen noodles that was flavored chili and lemongrass. 
            IMO – ehhh.  It was supposed to be a soup like I think, but I didn’t want it that runny so I nuked it
            way longer than the directions said and I think it killed the flavors.  I tossed it w shrimp too. 

Time to hit the sack, the best part of today is getting some extra paperwork time.

a nice start to the week

We had another decent Monday as far as the come and go.  Nothing out of the norm in the am.  I pulled a couple pieces of duck jerky for Sasha and she was so excited that she made getting into her kennel uber easy.  With that I was able to get to work with plenty of time and checked my emails and paid a bill; woops I forgot to pay the other one and just now realized!  EEK, hopefully I’ll get to it tomorrow. 

My CCT had to work the late shift, as in later than me!  Instead of staying w the rascals I got to take our kids back to the room.  Man Dear Fussy is a very unfriendly Monday morning kinda person!  I said something to CCT3 and she said that’s how her Monday’s always are.  Other than the grumpiness it was easy. 

One of the girls came in wearing panties today!  A family I sit for actually.  Mom told me that they were going to try it over the weekend and if little lady did well she’d wear em’ today; guess she did well b/c she only had one accident!  I used my phone as a potty alarm and she loved the song she picked out.  Abstract Impy will be her name, lets hope I remember!  The only pee she really did was in her pull up during nap time. 

Since CCT3 worked the laste shift she got to take an hour lunch AND I got to take the early one.  I checked and deleted all the unimportant bogs as well as uploaded almost all my back logged entries.  I almost got done uploading yesterdays, but had lots of links so that slowed me down a bit. 

While my CCT3 was on her break I basically completed one of my tallies of an assessment that had to be done ASAP.  I’m pretty sure I forgot to mention it last week.  One of my friends, who has a kid in the room, has concerns about his language due to what her parents said.  She voiced it to our HR lady, who passed the concern on through the vine and finally got to us.  He’s doing fine!  His lowest score was 3 yrs and 4 months.  Several of his scores were at 4 years and he won’t be 4 till June or July. 

The floater, my old CCT1, came in at 2:10 to give us paperwork.  I was a bit flustered b/c she always comes in late.  I tried to figure out what it is that keeps her, but didn’t go about it the best way b/c she got ticked when I asked.  She said ‘you’re never ready when I come in anyways so I come in late’ and ‘I’m usually here at five after’.  I had to tell her that ‘she’s normally there around 2:15 and part of the reason we aren’t ready is b/c we aren’t sure whether or not she’s coming in since she’s always late’.  Then she said something about she hasn’t had a lunch break in three weeks anyways and was pissed about that.  Basically nothing was settled and I’m not sure if she’s still mad at me or not. 

Also I think my CCT3 is ill w me too.  Last week she went on Monday the entire time and when I asked her about me going the entire time like discussed she seemed a bit perturbed; she went the entire time then too (I’m such a sucker – I know there will be times I’ll need more than she does and hope she’s willing to share/give up her time).  When our relief came in she said ‘you can go the whole time since I took ups o much last week.  I know I’m probably reading too much into it, but that’s my personality.  I wonder how we’ll split the time on Wednesday.  I haven’t started the LP for next week.  I took care of the kids assessment and then scored my data sheets so I can start typing the summaries. 

When I went back to class there were very few kids and they were willing to listen so it was easy.  Few kids = 6 w 2 leaving at a quarter after and 1 getting therapy ASAP.  So I really just had 3 to play and color with.  I took em’ on an excursion and practiced drinking from the water fountain. 

Of course when I got home I took care of lunch, dinner prep, and then the dishes.  Now we are watching another movie.
            IMO - thank goodness we saved a dollar

I’m not so sure I did well today:
Bfast – blueberry peach 7 grain hot cereal
Snacks – a handful of caramel rice crackers and a cupcake
Lunch – minestrone soup w black beans and extra veggies
            IMO – WAY better than w the extra spinach I did last week
Snack – five veggie straws, cantaloupe, and 2 bites of chocolate
Dinner – LO spaghetti squash casserole revamped w tropical salsa, extra zucchini and onions, tossed w balsamic vinegar. 
            IMO – edible, not the best. 

I enjoyed watching the kids drink from the fountain the most today.  It was cute watching em’ try to hold the button and drink at the same time.  Mr. Sensitively Susceptible was my fav; he said it tasted like lemonade!  To cute and imaginative.

I’m thankful that today was a nice one, and hope tomorrow will be too!

another new recipe success

My day started w my hubby being sweet again and turning off his alarm after the first ring!  For bfast I had banana blueberry oatmeal.  This time I sweetened it w almond extract instead of sugar.  I liked it.  I did put too much water in it though and it was super runny for oatmeal.

For some reason traffic was ‘friendly’ today.  I left the house around the same time I always do and got to work ten minutes earlier than normal.  I read on the yahoo page that one of my favorite music artists from the nineties was only a teenage when her songs were hits!  I can’t wait to listen to her CD again knowing that. 

The day was mad crazy.  The AT in the Girraffes class has been working on doing a special art project w all the kids through out the building and we actually got to be included today.  The crazy part was where instead of her coming to our room to do it, we had to split our kids between their age groups and there wasn’t a plan it was just ‘wung’ so to speak.  So I spent the first fifteen minutes w my kids, the next in the hall talking to the newest parent (again) and then the next hour and half w my one kid in the toddlers room playing. 

The little I ate for lunch did not upset my stomach.  I didn’t eat my packed soup, just the fruit (I really wasn’t hungry after carrots and vanilla wafers). 

My little guy w Autism’s mom actually read the report today that I completed yesterday.  I’m not used to have such a quick turnaround!  It usually takes parents at least a weekend to read it and get back to me if not a whole week!  She was proud of some of the things he’s doing and told me other things that I didn’t have included. 

Then I started on writing the words to our kids Valentines day cards, but didn’t get very far; just the word ‘heart’ on ten out of thirteen. 

Instead of playing with the big kids I had to go to the Two’s class b/c the AT left for a dr’s appt..  It wasn’t as bad as I thought it would be.  We played outside, came in and read, played on the I-Pad, colored, ate snack, and then played in the block center.  At ten till five I took a trip and checked to make sure there was going to be coverage so I could leave and she said she was on her way.  However she didn’t get in there until six after!  I say six b/c at eight our time rolls to the next quarter.  Well I still had to put my stuff away; I couldn’t just leave it in their room!  So it was ten after by the time I actually ‘clocked out’ on the paper. 

You should be proud of me – I actually remembered to pick up my book from the library today!  It was the last day I could do it or else it would have gone back on the shelf.  While I was there I took a few minutes to read several of their posted papers.  One of them I found really interesting and I’m going to share it w Lindsay.  The library has this ‘book club in a bag’ kit that can be borrowed.  It’s a bag w ten books, discussion questions, and something else.  When borrowed it can be kept for six weeks (I think).  There are at least a hand few of books that I glanced at that I’m interested in. 

Hubby had to work late, again, today so I made myself busy: washing dishes, prepping lunch, and making dinner.  For dinner I made Mediterranean stuffed peppers. 
            1 bell pepper
            1 serving white northern beans
                        ½ mixed w cranberry preserves, chipotle pepper adobe sauce, & a wee bit of French for swtns
                        ½ mixed w garlic, salt, spinach & herb seasoning, & sun dried tomato pesto
I baked it till the edges of the pepper was crispy.  Close to thirty minutes.  It was super yummy!  Halfway through the peppers the beans mixed and I liked it that way better than individually. 

Now we are watching Conan and the two main characters look so different.  I’m enjoying a cup of gingerbread flavored half caf half decalf latte. 

Tomorrow is going to be a weird one – we actually have kids!  (instead of paperwork and floating)

Making a successful ‘recipe’ excites me today!
